The 5 Best Gluten-Free Recipes

If you haven’t caught on, a few months ago I found that my body decided for me to go gluten-free. It’s been a big change in my life – goodbye soft, fluffy bread – but one that I’ve tried to deal with as gracefully as possible.

five best gluten-free recipes

Today I’m sharing the five recipes that have gotten me out of my food slump of boring, crusty food. These recipes are good whether you eat gluten or not, so definitely give them  a try!

Bye Bye Gluten! Hello Gluten-Free! The 5 Best Recipes

Strawberry Honey Overnight Oats

Strawberry Honey Overnight Oats - Step 3

This is one of the best – and easiest – breakfasts I’ve ever had and there isn’t a single drop of gluten. If you didn’t know, oats are generally gluten-free, so if you’re struggling with the change, I definitely recommend making these delicious, creamy, fruity overnight oats.

TIP: Make in bulk – in these adorable jars – to not have to worry about breakfast all week.

Panang Curry

Pantry Friendly quick and easy 30 Minute Chicken Panang Curry tastes better than your favorite restaurant at a fraction of the price with easy to find ingredients!

My favourite dish at the local Thai place is panang curry, but whenever I try to make it, it doesn’t taste the same. This recipe does! It’s creamy and spicy and absolutely perfect for dinner. Serve over a bed of rice {which is gluten-free} and enjoy a plate while catching up with friends or watching your favourite show.

TIP: When heating up leftovers, place a small bowl of water in the microwave to make sure the curry and rice don’t dry up.

Black Bean Tacos with Avocado and Cilantro Lime Crema

A few things I love: 1) Black beans 2) Tacos 3) Avocados 4) Cilantro Lime Crema. Add them all together and you have some of the best tacos ever! Of course, you need to put it all in a corn tortilla, but they are perfect for Taco Tuesday with a margarita.

TIP: Replace the Greek yogurt with a 1:1 ratio of Greek yougurt/Sour cream and it is literally so worth it!

Avocado Fudge Brownies

If dessert is your fancy, this is an easy alternative to all your favourite baked goods. To be honest, that’s the hardest part of eating gluten-free. So grab your millennial avocados and coconut flour and make these fudgy brownies for a sweet treat.

TIP: You can replace the coconut flour with almond flour or arrowroot for another equally delicious gluten alternative.

Slow Cooker White Chicken Chili

This is the easiest, most delicious, most addictive white chicken chili I’ve ever had. I love to make a big batch in the crock pot and then freeze it. This is the recipe that made me fall in love with gluten-free eating and meal prep, and after one batch I think you’ll say the same.

TIP: Crush up gluten-free crackers for making this a nice, savory winter meal.
