The Easiest Breakfasts for the Busiest People

I am a bum in the morning. I watch Netflix in bed until the last possible moment, and am always rushing out the door with breakfast in a paper towel and about 10 minutes to get across town. It’s not exactly the perfect way to promote a healthy breakfast situation.

But after years of this practice, I have found the perfect “busy bee” breakfasts that promote eating in the morning (which is so important) and not wasting a single moment in the morning. Because what could be better than that? These breakfasts are easy, take relatively no time, and are going to keep you up and running until that lunch bell finally rings.

The Busy Bee Breakfasts

Hard-boiled eggs

If you’re rushing to a meeting, a little pepper on a hard-boiled egg is the perfect breakfast! Easily transportable, with healthy protein, this egg is the easiest choice. And you can make a huge batch of hard-boiled eggs at the beginning of the week and then just take them out of the fridge and spend two minutes cracking off the shell before heading out the door.

Bagel with spread

Whether you love cream cheese, peanut butter, or a salty butter yumminess, a bagel is easiest one of the best portable breakfasts if you’re really busy. A whole grain bagel will keep your body running from the carbs, and depending on what topping you prefer you will get the nutrients from that. You can even get creative with fancy toppings. I spent most of the week running around downtown Eugene with a cream cheese bagel stuffed in my hand.

Yogurt, granola, and fruit

From my previous blog post, we all know this is a quick breakfast to make and is super good for you! It takes about three minutes to make and five minutes to eat, so if you have ten minutes to spare, here is the healthiest, most filling meal you can make for your busy life. And if you put it in a plastic container it’s portable!

Heat and go breakfast burritos

If you’re into eating on the go, and meal prep, then this is the perfect breakfast for you. This recipe from Jen Goode at 100 Directions makes eating a hot burrito really easy every morning. Simply stick everything in your tortilla, wrap it up, freeze it, and eat as you go! You can even pop them in the microwave when you’re getting dressed or packing up your bag.

Eggy avocado toast

Mash an avocado, make some quick scrambled eggs, and toast some bread. Sounds easy, right? This breakfast is delicious and so healthy that you’ll think you’re having a treat first thing in the morning. This is a real super food breakfast that will keep your body running on high for well into the afternoon.
