I’ve always been a sucker for cupcakes. And since they are so popular nowadays, what with all of the cupcake bakeries and Cupcake Wars and celebrities basing their children’s’ birthdays just on these amazing cupcakes; I have really gotten into the cupcake mode.
I find myself more and more often searching through Google and magazines looking for really good cupcake recipes. Sometimes I even use cake recipes. Today I thought I would share with some of my favorite cupcake recipes with all of you so that you can join me in this cupcake extravaganza!
Martha Stewart’s Cookies ‘n’ Cream Cheesecake Cupcakes
For these delicious cheesecake cupcakes, you will need
2 pounds room-temp cream cheese
1 cup sugar
1 tsp vanilla extract
4 large eggs
1 cup sour cream
Pinch of salt
Chop up 12 of the Oreos into small pieces. Beat the eggs in a separate bowl. Preheat the oven to 275 degrees. Now you’re ready to make!
Line your muffin tin with paper liners (so that the batter doesn’t stick). Place one cookie in the bottom of each. With an electric mixer, beat the cream cheese until it is smooth, like cream cheese. Add the sugar and the vanilla gradually into the mixing bowl. Combine the egg mixture into the bowl and beat in the sour cream and salt. Stir in the chopped cookies with a spoon. Spoon the batter into the muffin tins to the top. Bake, cook, etc. for 22 minutes. Then refrigerate your mini cakes overnight (minimum 4 hours). These delicious cookie/cream/cheesecake mini cakes will melt in your mouth and will even win you friends 🙂
Paula Dean’s Irish Coffee Brownie Cupcakes
5 tablespoons unsalted butter
1/2 cup sugar
1/2 tsp vanilla extract
1/3 cup unsweetened cocoa powder
1/3 cup all-purpose flour
1/4 tsp salt
In a bowl, beat sugar and better until light and fluffy. Mix in eggs and vanilla until completely combined, then add vanilla, cocoa powder and salt. Put aside for further use, yo.
For the cupcake part you will need
1 cup whole milk
1 cup whole roasted coffee beans
1 1/2 cup all-purpose flour
1/2 tsp salt
1 tsp baking soda
1/4 tsp baking powder
1 cup unsalted butter
1 1/4 cup sugar
1/4 cup whiskey
Preheat oven to 350 degrees.
In a small saucepan, heat milk and coffee beans until slightly boiling. Take off the heat and cover them for 15 minutes. Not sure what that does. Use a sieve and remove the beans from the milk. In a separate bowl, mix the flour, salt, baking soda, and baking powder. In another bowl, beat the butter and sugar with a beater. Add the eggs to that bowl. In yet another bowl (hope you have enough), mix the whiskey and 3/4 cup of the coffee bean milk. Mix the dry ingredients and wet ingredients into the sugar/butter bowl. Fill your lined muffin liners with the cupcake batter. Take a tablespoon of brownie batter and press it into the middle of each cupcake. Bake for 20 minutes. They are so good and definitely a trademark for your St. Patty’s celebrations!
